Smoked Garlic Scape Salt

Our garlic scape salt gives a burst of flavour to any savoury dish. Garlic scapes are the slim curly flower stems that grow from the tops of hardneck garlic. Their flavour is similar to garlic cloves, but less fiery and slightly sweet. We dehydrate local garlic scapes during their short season and combine them with Vancouver Island Sea Salt for a seasoning mix that has become a house favourite. Use as finishing salt on grilled pork, chicken, tomato salad - or anything that needs a hit of flavour. Sprinkle on fresh baked bread with butter for the ultimate garlic toast.
